UPDATE September 20, 2021: It seems this is becoming abandoned-ware. The tech people do not respond. There are constant errors with badges reflecting completely incorrect message counts. Makes you wonder if the Polymail is going Polybyebye.
The app is not ready for prime time. I’m a paying customer and can assert that I would not be surprised if Polymail goes the way of Astro, Newton, and all the other paid apps. The difference: those apps worked. This one, for the most part, does not. Further, customer service is horrible. They work a few hours a day. Are only available via online chat from the website. And their responses are often non-sensible. Have a problem on a weekend? Good luck! Even Airmail people respond. But Polymail may or may not respond on Monday. Even worse, you’ll receive a never ending flow of emails from founder Brandon Foo, but trying to email him directly — finding his address is easy — generates no response. If there’s venture capital involved, I’d hope someone reconsiders whether the app is worth financing. It certainly isn’t worth $99 a year.

I had high hopes for Polymail given the reviews I read. I spent several hours setting up the account the way I wanted it. The problems I found so far: 1) the synching is delayed by as much as 2 hours, so an email I received in my gmail account interface would not show up in polymail for 1-2 hours later; 2) the documentation is terrible, I tried to figure out things like how to set up my folder structure and there's no documentation; 3) the folders are very hard to use. if you delete one, it deletes the entire folder and filing system in the native source as well (although doens't warn you it is doing that)- there is no capacity to move boxes around or dynamically update them other than adding new boxes and changing names; 4) the support is extremely slow and takes up to a day to reply. I hated it.

I thought I give Polymail another try after I was really not happy with it a year ago but I was really surprised to discover that my same complaints are still valid:
How can it be that I can't paste my account password in the login screen but have to enter it manually instead?? This is a hugr security risk as it promotes usage of passwords that are easy to remember rather than relying on a password manager. I use 30+ letter/digit/number passwords and not being able to paste them is a no-go for me from the get-go.
As I did want to try Polymail though, I did enter the password manually (real pain…) only to discover that I still cannot display folders/labels by account but that they are rather grouped together. Such a mess… I have 13 accounts but I stopped after three as it became unmanageable. I realize that 13 accounts is an edge case but even with three accounts and lots of folders, this is unacceptable.
I surely hope that these bugs/oversights can/will be fixed but until then, Polymail remains a merely ok email app.
